Brown ground beef and add taco seasoning per instructions on seasoning packet. When browned: drain, if necessary, and add Rotel or 1 cup of salsa.
Mix the softened cream cheese and refried beans together.
Spray crockpot with non-stick cooking spray.
Place 2 tortillas in the bottom of crockpot, so that the bottom is covered.
Spread 1/2 of cream cheese mixture onto tortillas.
Spread 1/2 of ground beef mixture on top of cream cheese mixture.
Sprinkle fiesta blend cheese on top of ground beef layer.
Drizzle 1/2 of enchilada sauce on cheese layer.
Repeat steps 4-8 to create a second layer.
Place 2-3 tortillas on top, cover with sharp cheddar cheese, and sprinkle chopped green onions.
Place the lid on the crockpot and set to high.
Cook on high for 1-2 hours.
